In a large pot saute vegetables and garlin in olive oil. Add water, chicken broth, wine, beans, spice packet, tomatoes, chicken. Bring to a boil and simmer covered for about 2 -3 hours or until beans are tender. Just before serving shred or cut up chicken Add salt and pepper to taste.

2 T. olive oil
2 cups onion, chopped
2 cups celery, chopped
3 t. garlic, minced
4 cups of water
28 oz. chicken broth
1/2 cup white wine
14 oz tomatoes, diced
1 lb. boneless chicken breasts, about 3
1 lb. white beans

Recipe Directions for White Bean Provencial

In a large pot put all ingredients and bring to a boil. Cook simmered and covered for 2 - 3 hours or until beans are cooked. Before serv ing cut chicken into small pieces. Salt and pepper.
