Recipe Ingredients for White Bean Primavera

0.5 medium raw Bell Pepper Green
0.5 medium Red Bell Pepper
14.5 oz Cannellini White Kidney Beans
14.5 oz Fire Roasted Diced Tomatoes
1 medium Squash, Summer, Zucchini, Includes Skin
1 tsp Crushed Garlic

Recipe Directions for White Bean Primavera

Saute 1.5 t garlic, 1/2 red, and 1/2 green bell peppers in 1 T of EVOO; Add zucchini and stir until partially cooked; Season with salt, pepper and oregano; Add 1 can muir glen fire roasted tomatoes and bell peppers and simmer for 15 minutes; Add white beans and simmer for 10-15 minutes more. Serve over rice, pasta, quinoa, or couscous.
