Minestrone style, hearty bean soup

Recipe Ingredients for White Bean and Pasta Soup

1 tbsp. vegetable or olive oil
2 stalks celery, sliced
2 medium carrots, chopped
1 medium onion, chopped
1 clove garlic, minced
1 tsp. dried basil
1 tsp rosemary leaves
28 fl oz Diced Tomatoes
284 ml Chicken Broth
284 ml Water
1 cup macaroni, (use baby shells)
19 fl oz white kidney beans, drained and rinsed
2 cups fresh spinach, packed
1/4 cup shredded Grated Parmesan or shredded mozzarella cheese (opt.)

Recipe Directions for White Bean and Pasta Soup

  1. HEAT oil in large saucepan over medium-high heat.

  2. SAUTÉ celery, carrots, onion and garlic 5 minutes; stir in basil and rosemary. Add tomatoes, chicken broth and water; bring to boil.

  3. STIR in shells, return to boil, reduce heat and simmer 10 minutes, stirring occasionally until pasta is tender.

  4. ADD kidney beans and heat through, about 2 minutes. Stir in spinach and heat for 1 minute, just until wilted.

  5. LADLE into soup bowls and sprinkle with cheese, if desired; serve immediately.
