Recipe Ingredients for White Bean and Kale Soup

797 grams Beans, White, Mature Seeds
38 grams bacon
104 grams Onions
1 tbsp Olive Oil
96 grams Celery
97 grams Carrots
17 grams Garlic
155 grams Kale
3 cups chicken stock

Recipe Directions for White Bean and Kale Soup

  1. If you're using dry beans, soak them overnight in warm water or put them in a pot, boil for three minutes, and let them soak covered for 3 hours.

  2. Put a pot on medium heat and add the bacon. Let some of the fat start melting off the bacon before adding the olive oil and onion.

  3. When the onion becomes translucent, add celery, carrots, garlic, and rosemary. Cook for 5 to 10 minutes or until everything starts softening up.

  4. Add the beans and chicken stock/water. Turn heat to high and wait for it to boil, then turn the heat to low, cover the pot, and leave for 10 minutes.

  5. Add kale and let the soup simmer for 25 minutes.

  6. Puree and taste. You can add salt and pepper to taste.
