South Beach Phase 1 Soup - can substitute any white beans and assorted greens for taste.

Recipe Ingredients for White Bean & Greens Soup

16 oz Great Northern Beans
2 cup Chard, Swiss
4 cup, chopped Squash, Summer, Zucchini, Includes Skin
3 cup Beef Broth
3 cup (8 fl oz) Water
1 medium (4-1/8" long) Onions, Spring Or Scallions
2 clove Garlic
1 small whole (2-2/5" dia) Tomatoes, Red, Ripe
1 dash Pepper, Black

Recipe Directions for White Bean & Greens Soup

If using dry beans, soak overnight. Shred or chop zucchini and chard. Dice garlic, onion and tomato. Add all ingredients to large pot (except pepper). Bring to hard boil. Reduce to simmer. Cook 40 minutes until beans are soft and greens fall apart. Pepper to taste
