Recipe Ingredients for White Bean Gratin

2 1/2 cups dried navy beans
4 cups chopped onions
1/4 cup Garlic
1 carrot
1 stalk,+medium+7-1/2"+-+8"+long celery rib
3 Thyme
2 1/2 quarts water
3 tsp white wine vinegar
1 tsp salt
1/2 tsp black pepper
5 tablespoons olive oil
1/2 cup breadcrumbs
4 ounces grated Gruyere cheese
2 ounces grated parmesan cheese

Recipe Directions for White Bean Gratin

Soak beans overnight and drain. Put in large pot with water, onions, carrot, celery, 3 thyme springs and garlic. Bring to a simmer and cook until beans are tender. Drain, reserving liquid. Remove garlic cloves and chop fine. Put beans in a casserole dish and return cooking liquid to the pot and boil until reduced to about 1.5. cups. Preheat overnto 425. Blend 1 cup beans, reduced cooking liquid, 3 tbs oil, vinegar and salt. Stir into whole beans and season with salt and pepper. Toss breadcrumbs, cheese and minced garlic and spread over beans. Drizzle remaining olive oil on top. Bake about 20 minutes.
