Recipe Ingredients for White Bean & Fresh Mozzarella Salad

3 cups dried Great Northern Beans
2 tablespoons chopped oregano leaves
8 ounces fresh mozzarella, cut into small cubes
3 large ripe tomatoes, chopped
1/2 cup chopped red onion
2 tablespoons balsamic vinegar
2 tablespoons extra virgin olive oil
1 teaspoon salt, to taste
1 fresh ground pepper, to taste
2 tablespoons chopped basil (optional)

Recipe Directions for White Bean & Fresh Mozzarella Salad

  1. Soak the beans overnight in cold water, or use the quick-soak method: Bring the beans to a boil in a large saucepan, and cook them for 5 minutes. Remove the pan from the heat, and let the beans soak for 1 hour.

  2. Drain the beans and rinse them well. Put them into a saucepan, and cover them with water. Bring them to a simmer and cook them, replenishing water as needed for at least 1 hour, until they are just tender (they should have a very slight bite in the middle). Drain the beans and rinse them well.

  3. In a large bowl combine all ingredients except beans, salt, and pepper, and mix together well. Add beans and stir gently to coat. Salt and pepper to taste.
