Recipe Ingredients for White Bean Flour Banana Muffins

1 1/2 cups banana
1/6 cup oil
1/2 cup flaxmeal
2 eggs, lightly beaten
1/2 cup spelt flour
1 1/2 cup White Bean Flour
3/4 cup brown sugar
1 tsp baking soda
1 tsp baking powder
1 tsp cinnamon
1/4 tsp salt

Recipe Directions for White Bean Flour Banana Muffins

  1. Mix mashed bananas, oil, and eggs together in a large bowl and beat well.

  2. In a separate bowl, combine flour mix, brown sugar, baking soda, baking powder, and salt. Stir into banana mixture. Stir in 1 cup of currants, chocolate chips or walnuts if desired.

  3. Pour into lined muffin tin. Bake at 350 degrees for 25 minutes or until a toothpick inserted in the center comes out clean.
