Recipe Ingredients for White Bean and Escarole Soup

3 tsp garlic
1 tsp red pepper flakes
1 stalk leek, sliced
5 links , chopped fine
3 cups chicken stock
3 cups water
16 oz mushrooms, sliced
16 oz white beans
2 heads escarole
1/2 c parmesan

Recipe Directions for White Bean and Escarole Soup

Saute the first four ingredients until golden brown. Add remaining ingredients except cheese and simmer until escarole is wilted. Garnish with cheese and serve.
