Recipe Ingredients for White Bean Dip w/Basil-Infused Oil

1/2 cup basil
1/4 cup extra-virgin olive oil
15 1/2 oz cannellini
1 clove garlic
1 tsp lemon juice
1/2 tsp black pepper
1/4 tsp salt

Recipe Directions for White Bean Dip w/Basil-Infused Oil

  1. To keep the basil bright green, blanch and shock it: Fill a large suacepan with water and bring to a boil. Meanwhile, fill a large bowl with water and 2 or 3 trays' worth of ice cubes. Place the basil in a strainer and lower it into the boiling water for 5 seconds, making sure all the leaves are covered. Immediately transfer the basil to the ice-water bath. Drain th ebasil and transfer it to a bed of paper towels, wrapping the towels around the leaves and squeezing them to remove as much water as possible. Combine the basil and 1/4 cup of the oil in a blender and pulse until the leaves are very finely chopped. Pour the mixture through a fine-mesh sieve into a measuring cup or other spouted vessel. Then, for an even clearer oil, pour it through 6-8 layeres of cheesecloth into a small pitcher. Refrigerate until ready to use.

  2. Drain the beans, reserving the liquid. Place the beans, 3 tbsp of the oil, the garlic, lemon juice, pepper, and salt in a blender. Add 2 tbsp of the reserved liquid from the beans and pulse until the mixture is smooth. If it is too dry, add more of the reserved liquid, 1 tbsp at a time, until it has the consistency of mayonnaise. Transfer the dip to a shallow bowl, cover, and let stand for 1 hour.

  3. When ready to serve, use a spoon to make a small well in the center of the dip. Pour the infused oil into this well and, using a chopstick or the handle of the spoon, draw the oil in a spiral pattern over the surface of the dip. Serve with pita bread.
