A tasty white pizza. You can easily add more vegetables to change things up a little bit. If you rinse the beans, there will be significantly less sodium than the analysis shows. Chickpeas can be substituted for cannellini beans.

Recipe Ingredients for White Bean and Cottage Cheese Pizza

285 grams whole wheat pizza crust
1 3/4 cups cannellini beans, drained and rinsed
1 cup 2% milkfat cottage cheese
1/2 cup baby spinach, rinsed and chopped
1 large tomato, rinsed
2 tbsp garlic
2 tbsp basil

Recipe Directions for White Bean and Cottage Cheese Pizza

  1. Preheat the oven to 425 F.

  2. Spray a cookie sheet lightly with cooking spray and put the pizza crust on it.

  3. Drain the beans and rinse them well. Use a food processor to puree them. Spread the beans over the pizza crust.

  4. Puree the cottage cheese in the food processor so that it is smoother. Spread the cheese over the beans. Sprinkle basil and garlic over the cheese.

  5. Wash the spinach and cut it into smaller pieces. Arrange over the cheese.

  6. Wash the tomato and slice it thinly. Arrange the tomato on top of the pizza.

  7. Sprinkle with more basil, if desired.

  8. Bake in the oven for 10 minutes or so. Since the pizza crust is already made, you can take it out whenever it looks done.
