Recipe Ingredients for White Bean Chocolate Chip Cookies

1/2 cup great northern beans (or any cooked white bean)
1 cup brown sugar
24 g. (1/4 cup) egg powder
1/2 cup water
1 tsp vanilla
2 1/4 cups wheat flour
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
2 cups semi-sweet chocolate chips

Recipe Directions for White Bean Chocolate Chip Cookies

  1. Beat beans and sugar together. Add eggs and vanilla.

  2. In separate bowl, mix flour, baking soda, baking powder, and salt. Add flour mixture to bean/sugar mixture. Stir until well blended.

  3. Stir in chocolate chips and 1 cup chopped walnuts or pecans if desired.

  4. Cover and refrigerate 1 hour.

  5. Preheat oven to 350. Drop by tablespoonfuls on greased cookie sheet. Bake 10-15 minutes.
