Recipe Ingredients for White Bean and Chicken

1 cup Great Northern Beans, boiled
3 oz chicken, cut in bite sized pieces
1/2 tbsp sugar
1 1/2 tbsp white miso
1 1/2 tbsp low sodium soy sauce

Recipe Directions for White Bean and Chicken

  1. soak beans 8-12 hours (there should be just enough water in the pot to cover) and then 50-60 minutes on medium. (when you can crush the bean with your fingers, they're done)

  2. when the beans are tender, stir in the Chicken (trim the fat and cut into bite sized pieces) and raise the heat to high. Skim off the foam and any fat.

  3. When chicken is cooked, add the sugar.

  4. Dissolve the miso in some of the cooking liquid before adding to the pot.

  5. stir in soy sauce in a big circle with the thick ends of chopsticks

  6. continue cooking undisturbed until the liquid is almost gone.

  7. Garnish with the snow peas
