Hearty but healthy chili. Cilantro, lime, avocado, sour cream, or cheese can be used for garnish. Makes 10 16 oz servings (450 cal) or 20 8 oz servings (225 cal).

Recipe Ingredients for White Bean Chicken Chili

2 tablespoons vegetable oil
1 pound chicken breast, diced
1 onion, chopped
2 cloves garlic, minced
1 can chicken broth (14.5 ounce)
2 tbsp cornstarch
20 oz salsa
16 ounce diced tomatoes
1 jalapeno pepper
1/2 teaspoon dried oregano
1/2 teaspoon ground coriander
1/4 teaspoon ground cumin
30 ounce white beans
1 can corn
1 salt to taste
1 ground black pepper to taste

Recipe Directions for White Bean Chicken Chili

  1. Heat oil, and cook onion, garlic, and jalapeno until soft.

  2. Add all ingredients to slow cooker and cook on low for 8 hours.

  3. Serve with these toppings for people to choose from: limes, cilantro, cheese, avocado, sour cream, and tortilla chips.
