White Bean Chicken Chili Recipe

Recipe Ingredients for White bean chicken chili

6 boneless chicken breast halves
2 cups Sweet onions, chopped
2 Garlic cloves, minced
1 tablespoon Olive Oil
2 cups Chicken Broth
30 oz. of Cannellini or Great Northern Beans, rinsed and drained
30 oz. of Cannellini or Great Northern Beans, drained and mashed*
4 oz. of chopped Green Chiles
1 tsp. Kosher Salt
1 tsp. Dried Oregano, crushed
1 tsp. Ground Cumin
1 tsp. Chili Powder
1 tsp. Ground Red Pepper
1 tsp. Freshly Ground Black Pepper

Recipe Directions for White bean chicken chili

  1. Cut the skinless, boneless chicken breast halves into bite-size pieces. Set aside. In a large heavy saucepan or Dutch oven over medium-high heat, saute chicken pieces and onion in the olive oil for 6-8 minutes or until chicken is thoroughly cooked and juices run clear.

  2. Stir in garlic, cooking just for a minute or two. Stir in broth and the remainder of the ingredients* with the exception of the garnishes.

  3. Bring to a boil, cover, reduce heat, and simmer 20 minutes, stirring occasionally. *(To make this chili thick, I add an additional cup of broth or so to the two cans of beans to be mashed, utilizing a blender to mash the beans, creating a smoother puree of beans to add to the chili, thickening it naturally.)

  4. Serve in soup bowls with toppings of your choice. Makes 10 cups.
