Smoky-spicy and thick, perfectly offset by the coolness of the sour cream and the buttery avacados. A family favorite. Serving is about 1/2 cup, with 2 tsps sour cream and 1 Tbl avacado topping.

Recipe Ingredients for White Bean Chicken Chili with Avacados

2 lbs chicken thighs
4 tbl olive oil
1 tsp kosher salt
1/2 tsp pepper
2 onions, chopped
1 chipotle pepper (canned in adobo sauce)
28 ounces diced tomatoes
32 ounces canned white beans, drained
2 tbl chili powder
1 tbl cumin
1 1/2 cup beer (Corona or other light lager)
1 cup lime juice
1 1/2 cup chopped cilantro
4 cups avacado (about 4)
1 cup sour cream

Recipe Directions for White Bean Chicken Chili with Avacados

  1. Heat the oil in a dutch oven over high heat until shimmering. Sprinkle the salt and pepper over the chicken thighs and brown in batches on each side, about 3 minutes per side. Remove to a plate and let cool. Shred or chop when cool and reserve juices collecting on the plate.

  2. Cube the avacado and combine it with 4 Tbl of the lime juice, 1/2 cup of the onion, and 1/2 cup of the cilantro. Add a little kosher salt if desired. Allow to stand while preparing the rest of the soup.

  3. Place the tomatoes, chipotle in adobo, and 2 cups of the beans in a blender and blend until smooth.

  4. Add the onions to the pan and saute 3 minutes, scraping up the browned bits from the bottom of the pan. Add the chili powder and cumin and saute 20 seconds.

  5. Deglaze with the beer and simmer 3 - 4 minutes, or until the mixture is thick and liquid is nearly evaporated.

  6. Add the tomato mixture, chicken, and remaining beans. Simmer, stirring frequently, for about 15 minutes to allow flavors to blend. Add the remaining cilantro and lime juice and cook another 2 minutes.

  7. Serve topped with sour cream and avacado mixture.
