yummy, also need 1 bay leaf and some homemade veggie broth. I didn't put those in because I couldn't find something that matched homemade broth.

Recipe Ingredients for White Bean Cassoulet

1 1/2 tablespoons olive oil
1 1/2 cups parsnips
1 1/2 cups carrots
1 1/2 cups red onion
2 tablespoons garlic
1/2 teaspoon oregano
1/2 teaspoon thyme
1 tablespoon white miso
2 teaspoons dijon mustard
4 cups great northern beans
1 cup chopped tomatoes
2 cups vegetable broth
1/2 cup bread crumbs
2 tablespoons parsley

Recipe Directions for White Bean Cassoulet

  1. Chop the onion and peeled parsnip, and thinly slice the peeled carrots.

  2. Heat the olive oil and add the veggies stirring.

  3. Cover and cook over medium heat stirring from time to time till veggies are tender.

  4. Add the minced garlic, and cook about a minute.

  5. Blend the miso in 2 tablespoons hot water.

  6. Add the dijon mustard to this and stir all into the veggies.

  7. Add the thyme, oregano and a bay leaf.

  8. Stir well and set aside.

  9. Place the well drained and rinsed beans (from 2 cans) and drained chopped tomatoes into a lightly oiled casserole with a lid.

  10. Add the veggies and enough vegetable broth to cover.

  11. Mix well, cover and bake at 350 degrees for 45 minutes.

  12. Toast some bread crumbs, add chopped parsley and serve on the side as a garnish.
