A good hearty, yet still healthy soup.

Recipe Ingredients for White Bean & Arugula Soup

3 cloves garlic
1/2 yellow onion
2 T olive oil
6 mushrooms
32 oz. vegetable stock
3 small Potatoes, Red, Flesh And Skin
30 oz cannellini beans
2 cups arugula
1 tsp salt
1 tsp black pepper
1 1/2 tsp thyme

Recipe Directions for White Bean & Arugula Soup

  1. Saute onions, garlic, thyme and mushrooms in 1 1/2 T olive oil

  2. Add stock, potatoes and beans

  3. Simmer minimally until potatoes are cooked through

  4. Saute arugula in 1/2 T olive oil until wilted and add to soup

  5. Add salt/pepper to taste
