Fat free tea loaf with bags of flavour!

Recipe Ingredients for Whiskey Tea Loaf

200 g currants
200 ml tea
2 oz whiskey
250 g self raising flour
2 small eggs
100 g white sugar
100 g dark brown sugar

Recipe Directions for Whiskey Tea Loaf

  1. soak the currents with the whiskey and tea (I use a Morroccan blend with cinnamon to add flavour) for at least 8 hours

  2. Sift the flour and stir in the sugar

  3. Then add the beaten eggs and the fruit with the liquid.

  4. At this point I also add the grated zest of 1 orange and 1 tsp of cinnamon and nutmeg (all calorie free!)

  5. Heat the oven to 175C and put the cake mix in a loaf tin, I also use a load tin liner to make sure it doesn't stick!

  6. Cook for 45 mins and check, It can take up to 1.15, it really depends on the fruit as the more moist it gets can add cooking time.
