Not your typical meatloaf. My friends don't like ketchup in their meatloaf so I opted for Bbq and since I'm a whiskey girl I decided a little Jack Daniels couldn't hurt. It turned out pretty good.

Recipe Ingredients for Whiskey Bbq Meatloaf

2 small carrots
1 celery stalk
1/2 medium yellow onion
2 cloves of garlic
1/2 cup saltine crackers
1/4 cup white bread crumbs (1-2 slices of white bread)
1/2 cup parsley
2 teaspoons salt
1 teaspoon pepper
2 eggs
1 1/2 pound ground beef
1/2 cup barbecue sauce (Jack Daniels Honey is good as well as original)
1 tablespoon Jack Daniels whiskey

Recipe Directions for Whiskey Bbq Meatloaf

  1. Preheat oven to 400 degrees.

  2. Crush crackers until fine and place in mixing bowl.

  3. Remove crusts from bread and process in blender or food processor until fine. Place in the bowl with the crackers.

  4. Process carrots, celery, garlic and parsley and pour into bowl with breadcrumbs and crackers.

  5. Add BBq sauce, beef, eggs, pepper, and salt and mix with hands. Texture should be wet but still be able to hold a form.

  6. Place in loaf pan and add a little water around the sides to keep the loaf moist while baking.

  7. Bake for approx 1 hour or until middle is no longer pink.

  8. When loaf is almost done spread a little BBq sauce on top.
