Recipe Ingredients for whipped cauliflower

1 head cauliflower, steamed
3 tbsp. cream cheese fat free
1/4 tsp. onion powder
1/4 tsp. garlic powder
1/8 tsp. cayenne pepper
1 tsp. lemon juice
1/2 cup chopped chives
1/2 cup chopped parsley

Recipe Directions for whipped cauliflower

  1. chop cauliflower into florets

  2. steam or cook in microwave until very tender

  3. blend in food processor until fairly smooth in consistency

  4. use some of liquid rendered from steaming / cooking to balance the consistency while processing

  5. add the rest of the ingredients, reserving a little bit of the chives and parsley

  6. pulse processor a few times

  7. serve and sprinkle remaining parsley and chives on top
