180 grams (1 cup) hard winter wheatberries*
1 cup red onion, finely diced
6 tbsp. Extra-virgin olive oil, divided
2 tbsp. balsamic vinegar
3 scallions, minced, white & green parts
1/2 small red bell pepper, diced
1 carrot, diced
1/2 tsp. black pepper, freshly ground
1/2 tsp. Kosher salt

Recipe Directions for Wheatberry Salad - Barefoot Contessa - Food Network

  1. Place the wheatberries and 3 cups of boiling salted water in a saucepan and cook, uncovered over low heat for approximately 45 minutes**, or until they are soft.

  2. Drain.

  3. Saute the red onion in 2 tablespoons of olive oil over medium-low heat until translucent, approximately 5 minutes.

  4. Turn off heat and add the remaining 4 tablesppons (1/4 cup) of olive oil and the balsamic vinegar.

  5. In a large bowl, combine the warm wheatberries, sauteed onions, scallions, red bell pepper, carrot, 1/2 tsp. salt, and the pepper.

  6. Allow the salad to sit for at least 30 minutes for the wheatberries to absorb the sauce.

  7. Season, to taste, and serve at room temperature.

  8. **I had to cook the Wheatberries for 2-1/2 hours and add water several times before they were tender.

  9. *There are 2 kinds of Wheatberries available in health food stores or grocery stores. Hard winter (high protein), which are reddish brown, and Soft (low-protein), which are blond. The preferred one for this recipe is the hard variety for its chewiness.
