Some relatively healthy homemade meatballs! Serve with tomato sauce, on buns, whatever!

Recipe Ingredients for Wheatballs

1/2 lb ground beef
1/2 lb ground pork
1 c bulgur wheat
1 lb spinach
1/2 c parsley, chopped coarse
4 clove garlic, chopped fine
1 onion, grated
1 egg
1 egg yolk
1 tbsp cumin
1 salt, to taste
1 pepper, to taste

Recipe Directions for Wheatballs

  1. Blanch spinach in well salted boiling water for 30 seconds, then plunge in ice water. Coarsely chop.

  2. Add 2.5 c boiling water to 1 cup bulgur wheat and allow to rest for 30 minutes. Drain if necessary.

  3. In a large bowl, smush all ingredients together.

  4. Form into loaf or balls or patties.

  5. Bake a 425 for 20 minutes (for balls) to 45 minutes (for loaf).
