This is a basic version of tabbouleh.

Recipe Ingredients for Wheat Salad

1 1/2 cup parsley, chopped
1 cup mint, chopped
1 cup bulgur wheat
1 1/2 cups tomato, chopped
1 1/2 cups water
1 T lemon juice, fresh squeezed

Recipe Directions for Wheat Salad

  1. Bring the water to a boil, then pour over the bulgur, and leave covered for 15-20 minutes, until the bulgur is just slightly chewy.

  2. Stir in the tomatoes, herbs, and lemon juice, and refrigerate for 30 minutes to overnight.

  3. Toss again before serving.
