A slight variation to "Another Bran Muffin Recipe" using a combination of wheat and oat bran, and adding a banana and deleting the raisins. Adding 1/4 cup raisins adds about 10 calories per muffin. These have become my favorites.

Recipe Ingredients for Wheat/Oat Bran Muffins

1 cup wheat bran
1/2 cup oat bran cereal
1 cup whole wheat flour
1 cup skim milk
1 tablespoon vinegar (added to skim milk above to make 1 cup soured milk)
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon vanilla extract
1/2 teaspoon salt
1/3 cup Splenda granulated
1/3 cup molasses
1/4 cup unsweetened applesauce
1 ripe banana (mashed)
1 egg

Recipe Directions for Wheat/Oat Bran Muffins

  1. Preheat oven to 375 degrees F (190 degrees C). Grease muffin cups or line with paper muffin liners.

  2. Add skim milk to vinegar to make 1 cup soured milk and set aside for 5 minutes.

  3. Mix together wheat bran, oat bran and soured milk; let stand for 10 minutes.

  4. Beat together applesauce, egg, Splenda, molasses, banana and vanilla and then add to milk/bran mixture.

  5. Mix flour, baking soda, baking powder and salt.

  6. Stir flour mixture into bran/milk mixture, until just blended.

  7. Fold in raisins (if desired) and spoon batter into prepared muffin tins.

  8. Bake for 15-18 minutes, or until a toothpick inserted into the center of a muffin comes out clean. Cool and enjoy!
