Combination of whole wheat & all-purpose flour

Recipe Ingredients for Wheat Loaf

1 pkg. dry yeast
1 c water
2 c whole wheat flour
1/4 c honey
2 tbs canola oil
1 tbs dark molasses
1 tsp salt
1/4 c wheat germ
2 tbs cornmeal
1 1/4 c all purpose flour

Recipe Directions for Wheat Loaf

  1. Disolve yeast in warm water, let stand 5 minutes.

  2. Lightly spoon whole wheat flour into dry measure & level.

  3. Add whole wheat flour, honey, oil, molasses and salt to yeast mixture stirring well to combine.

  4. Cover and let stand at room temperature 1 hour to create a sponge.

  5. Add wheat germ and cornmeal to sponge. Lightly spoon ap-flour into dry measure & level. Add 1 cup flour to sponge, stir until a soft dough forms. Turn dough out onto a floured surface. Knead until smooth & elastic, add enough of remaining flour 1 tbs at a time to prevent dough from sticking to hands.

  6. Place dough in a large bowl coated with cooking spray, turning to coat top. Cover and let rise in a warm place for 1 hour or doubled in size. Punch dough down, cover and let rest for 5 minutes. Shape into loaf. Cover and let rise 45 minutes or until doubled in size.

  7. Preheat oven to 375. Uncover and bake for 45 minutes or until loaf is browned. Remove from pan, cool on a wire rack. 16 servings.
