Recipe Ingredients for Wheat Germ Raisin Ginger Muffins

1/2 cup wheat bran
1 cup yogurt
1 large eggs
2 tablespoons olive oil
2 tablespoons molasses
1/2 cup apple sauce
1 cup whole wheat flour
1/4 cup oat bran
1/4 cup wheat germ
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon ground ginger
1/2 teaspoon cinnamon
1 teaspoon grated orange rind
1/4 cup raisins
1/4 cup cranberries

Recipe Directions for Wheat Germ Raisin Ginger Muffins

  1. Combine the wheat bran with yogurt in a bowl, mix well, and set aside.

  2. In another bowl, combine the egg, olive oil, molasses, and the applesauce.

  3. Add the bran mixture and mix again.

  4. Combine the flour, wheat germ, oat bran, baking powder, baking soda, and spices, and add this mixture to the wet ingredients.

  5. Process briefly just until no flour is visible.

  6. Stir in the plumped raisins/cranberries.

  7. Preheat oven to 375F. Spoon the batter into 12 muffin cups greased with a lecithin and oil mixture.
