Wheat Germ Pancakes Use 1/4 cup of batter for each pancake.

Recipe Ingredients for Wheat Germ Pancakes

2 cups flour
1 cup wheat germ
2 tbsp baking powder
2 tbsp splenda
2 tsp baking soda
1 tsp salt
1 1/2 cup orange juice
1 1/2 cup plain nonfat yogurt
6 tbsp canola oil
2 large eggs

Recipe Directions for Wheat Germ Pancakes

  1. In medium bowl, combine flour, wheat germ, sugar, baking powder, baking soda, and salt; mix well. In small bowl, combine orange juice, yogurt, oil, and egg; blend well. Add to dry ingredients, stirring just until dry ingredients are moistened. (Do not overmix.)

  2. Heat nonstick griddle or skillet over medium-high heat. For each pancake, pour 1/4 cup batter onto hot griddle. Turn pancakes when tops are covered with bubbles and edges look cooked.

  3. Serve hot pancakes with berries and or yogurt and wheat germ.
