Recipe Ingredients for Wheat germ ginger muffins

1/2 cup wheat bran
1 c buttermilk
2 eggs
2 T walnut oil
3 T honey
1/2 c unsweetened applesauce
1 c whole wheat flour
1/4 c wheat germ
1/4 c oat bran
1 tsp baking powder
1 tsp baking soda
1 tsp ground ginger
1 tsp cinnamon
1/2 tsp ground cloves
2 T orange rind, grated

Recipe Directions for Wheat germ ginger muffins

  1. Preheat oven to 375.

  2. Combine wheat bran and buttermilk and set aside.

  3. Mix eggs, oil, honey and applesauce together.

  4. Mix dry ingredients together.

  5. Add buttermilk mixture to wet ingredients and combine with dry ingredients mixing only until moist.

  6. Pour into greased muffin tins.

  7. Bake 15-20 minutes
