Recipe Ingredients for Wheat Germ Corn Muffins

1 cup Bob's Red Mill Pastry Flour
1/2 cup Bob's Red Mill Wheat Germ
1/2 cup Bob's Red Mill Cornmeal
1 egg
1/4 cup butter
2 tablespoon splenda
1 teaspoon baking powder
1/2 teaspoon salt
1 cup milk

Recipe Directions for Wheat Germ Corn Muffins

  1. Stir together flour, wheat germ, cornmeal, sugar, baking powder and salt

  2. Make a well in the center

  3. Combine egg, milk and melted butter or margarine

  4. Add all at once to flour mixture

  5. Stir just until moistened

  6. Batter should be lumpy

  7. Grease muffin pan or line with paper bake cups

  8. Fill 2/3 full

  9. Bake at 400 degrees for 20 minutes or until muffins are lightly browned

  10. Serve warm
