Recipe Ingredients for Wheat Free Yam Bread

1 1/2 cups brown sugar
1/2 cup applesauce
2 eggs
1 3/4 cups spelt flour
1 teaspoon baking soda
1/4 teaspoon salt
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1/3 cup water
1 cup yams, mashed

Recipe Directions for Wheat Free Yam Bread

  1. Combine sugar and applesauce; beat well.

  2. Add eggs and beat.

  3. Combine flour, baking soda, salt, cinnamon and nutmeg.

  4. Stir flour mixture into egg mixture alternately with water.

  5. Stir in mashed yams

  6. Pour batter into greased 9x5 inch loaf pan (or 2 small loaf pans).

  7. Bake at 350 degrees F (175 degrees C) for about one hour.
