mac n cheese made with rice pasta and soy milk

Recipe Ingredients for Wheat Free Mac n Cheese

8 oz dry elbow macaroni
1 cup onion
2 tbsp butter
2 tbsp garlic
2 tbsp spelt flour
1 dash cayenne pepper
1 tbsp arrowroot
2 1/2 cups plain soy milk
1 1/2 cups shredded sharp cheddar cheese
1 1/2 cups shredded monterey jack cheese

Recipe Directions for Wheat Free Mac n Cheese

  1. cook rice pasta according to package

  2. melt butter and cook onion and garlic until soft but not brown. add flour and pepper, stir. Add in milk all at once. heat over medium heatuntil slightly think and bubbly. Add in cheeses, stirring until melted. Stir in pasta. pour all into a cassarole dish and bake at 350 for 25 to 30 minutes. let stand for 10 minutes before serving.
