Recipe Ingredients for Wheat-free 8 Grain Muffins

1 Egg
1/2 cup Turbinado Sugar
1/3 cup Margarine
1 cup barley flour
1 tsp. Salt
1 tsp. Baking Powder
1 tsp. Baking Soda
4 servings Bob's Red Mill 8-Grain Wheatless Cereal
1 cup soy milk
1 tsp apple cider vinegar

Recipe Directions for Wheat-free 8 Grain Muffins

  1. Mix Bob's Red Mill 8 Grain Cereal and milk; allow to stand for 10 minutes while preheating oven and assembling other ingredients.

  2. Cream egg, margarine and sugar together.

  3. Add dry ingredients and milk with cereal to egg mixture. Stir only until combined.

  4. Spoon into greased muffin pan.

  5. Bake in 400 F oven for 15 minutes.
