Recipe Ingredients for Wheat Cracker Crusted Stuffed Pork Tenderloin

1 3/20 lb Pork Tenderloin
1/2 cup shredded Mozzarella cheese
1 medium Roma Tomato
2 tablespoons Sour Cream
8 leaves Fresh Basil
2 tablespoons raw Dijon Mustard
12 Club Crackers Multi Grain
1 large Egg
1 teaspoon minced garlic
3 oz Honey Ham

Recipe Directions for Wheat Cracker Crusted Stuffed Pork Tenderloin

  1. Stuffing Ingredients.

  2. Remove spine and Chiffonade cut 8 large basil leaves.

  3. Dice 1 medium Roma Tomato (2-2 1/2" dia).

  4. In a bowl combine the above ingredients with the sour cream, mozzarella, mustard, and garlic.

  5. Coarsely crush 12 whole wheat crackers crackers. Place the crackers on a plate or a piece of foil big enough to dredge the loin in after its coated with egg.

  6. Scarmble 1 raw egg to coat tenderloin.

  7. Prepare Tenderloin

  8. Trim all fat from a 1.5 pound Hormel Always Tender Pork Tenderloin (approx 2.5"x2.5"x10"). With a sharp knife along its length, butterfly the tenderloin and open to a half inch thickness. With the heel of your hand pr a tenderizing hammer on parchment or wax paper, pound the tendloin to 1/2 inch thickness - a 10"x10"x1/2" (ish) square.

  9. Lay the three slices of ham along the far edge (you're going to roll it toward you).

  10. Spoon and spread the wet mixture along its length on to the ham, spreading it over the far 1/2-2/3 of the tenderloin.

  11. Roll the tenderloin toward you as tightly as possible.

  12. Brush (or use your already messy hands to coat the roll on three sides with egg.

  13. flip the roll upside down in the crumbs and coat the bottom with egg, and then dredge and pat with wheat crumbs until thoroughly coated.

  14. Place in a baking dish and bake for 40 minutes at 350 (medium Well).
