Wheat bran goodness plus fruit plus protein. Healthy alternative to breakfast! Reese's Pieces adds a decorative touch.

Recipe Ingredients for Wheat Bran Muffins - With a Twist #3

1 1/4 cup wheat bran
160 g Nutri flour
80 g Compliments Quick Oats (60g Quaker Quick Oats)
2 tbsp baking powder
1/2 tsp baking soda
1/8 tsp salt
33 g chopped pecans
17 g sliced almonds
15 g dried coconut
72 g protein powder (used 60g ISOfemme, similar to item 100010)
45 g hemp seeds (30 g hemp, calorie counted with flax)
1/4 tsp allspice
1/4 tsp nutmeg
1/3 cup splenda
60 g all-bran cereal (Kellogg's or Weetabix)
19 g fresh ginger
55 g dried sulphered apricots
120 g fresh blueberries (89230)
22 g dried currants
36 g craisins
3/4 cup applesauce
1/2 cup evaporated fat free skim milk
1/2 cup boiling water
2 large eggs
70 g Reese's pieces

Recipe Directions for Wheat Bran Muffins - With a Twist #3

  1. Spray non-stick muffin tin with non-stick spray. Wipe around with paper towel to reduce carry-over and spread evenly.

  2. Pre-heat oven to 400 F.

  3. In bowl, combine all dry ingredients. (oats, coconut, nuts, protein powder, flour, leavening agents, spices, hemp seed)

  4. Make a well in center, set to side.

  5. In a small dish place currants, craisins and apricots. Let stand for at least 10 mins or until soft. Add applesauce, milk, eggs and ginger and mix thoroughly.

  6. Dump liquid mixture all at once into well in dry mixture bowl.

  7. Stir just until moistened. Batter should be lumpy. It's ok to see dry spots of flour.

  8. Spoon into muffin cups, filling 2/3 full.

  9. Proportion Reeses Pieces between the 12 trays, poking them slightly into the tops of the muffins.

  10. Place in oven and turn heat down to 375. Don't open oven till done.

  11. Bake for 20 mins - or until golden.

  12. Cool on wire rack for 5 mins then remove muffins from tray and either serve warm or let cool and then refrigerate.
