Chocolate, vanilla, strawberry + ginger make this an intriguing twist on my protein heavy bran muffins

Recipe Ingredients for Wheat Bran Muffins - With a Twist #2

1 1/4 cup wheat bran
160 g Nutri flour
9 tsp cocoa powder
2 tsp baking powder
1/4 tsp baking soda
1/8 tsp salt
33 g chopped walnuts
17 g sliced almonds
15 g dried coconut
72 g protein powder (used 60g ISOfemme, similar to item 100010)
45 g hemp seeds (30 g hemp, calorie counted with flax)
56 g dried blueberries
60 g all-bran cereal (Kellogg's or Weetabix)
22 g dried currants
36 g craisins
3/4 cup applesauce
1/2 cup evaporated fat free skim milk
1/3 cup Splenda
1/4 tsp vanilla extract
2 large eggs
1 tbsp olive oil
2 tbsp Smucker's twice the fruit strawberry jam

Recipe Directions for Wheat Bran Muffins - With a Twist #2

  1. Spray non-stick muffin tin with non-stick spray. Wipe around with paper towel to reduce carry-over and spread evenly.

  2. Pre-heat oven to 400 F.

  3. In bowl, combine all dry ingredients. (Dry fruit, nuts, protein powder, flower, leavening agents.)

  4. Make a well in center, set to side.

  5. In another bowl combine applesauce, milk, splenda, eggs, vanilla extract & oil.

  6. Dump liquid mixture all at once into well in dry mixture bowl.

  7. Stir just until moistened. Batter should be lumpy.

  8. Spoon into muffin cups, filling 2/3 full.

  9. Place in oven and turn heat down to 375. Don't open oven till done.

  10. Bake for 20 mins - or until golden. (For me - this should probably have been at about 15 mins.)

  11. Cool on wire rack for 5 mins then remove muffins from tray and either serve warm or let cool and then refrigerate.
