1st attempt at morning muffins. Based on a recipe from Beth Hensperger's "The Pleasure of Whole Grain Breads."

Recipe Ingredients for Wheat Bran Morning Muffins 1

2 1/2 cups wheat bran
2 cups buttermilk
1/3 cup canola oil
1/4 cup molasses
1/4 cup honey
3/4 cup dried cranberries
1 apple, peeled, cored, chopped
2 jumbo eggs
1 1/2 cups whole wheat flour
1 1/2 teaspoons baking powder
1 teaspoon baking soda
2 teaspoons cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon salt

Recipe Directions for Wheat Bran Morning Muffins 1

  1. Preheat oven to 375F. and position a rack in center of oven. Grease 12 (or 18) standard muffin cups.

  2. In a large bowl, combine the bran, buttermilk, oil, molasses, and honey. Stir with a whisk until evenly moistened. Add the dried cranberries and apple. Let stand at room temperature for 20 minutes. Add the eggs and whisk to combine.

  3. In another bowl, combine the whole-wheat flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Add to the buttermilk mixture and stir briskly with a large sppon just until evenly moistened, using no more than 15-20 strokes. Spook the batter into the prepared muffin cups until just level with the tops.

  4. Bake for 20-25 minutes, or until the tops are brown and feel dry and spring, and a cake tester inserted into the center comes out clean. Let the muffins rest in the pan for 5 minutes before removing to a rack to cool.
