Recipe Ingredients for Wheat Bran Cranberry Quick Bread

2/3 cup White Flour
1 1/3 cups Whole Wheat Flour
2/3 cup Wheat Bran
2/3 cup Brown Sugar
2/3 tsp Baking Powder
2/3 tsp Baking Soda
2/3 cup Chopped Nuts
2/3 cup Dried Cranberries
1 Egg
2/3 cup Skim Milk
2/3 cup Orange Juice
2/3 cup Oil

Recipe Directions for Wheat Bran Cranberry Quick Bread

  1. Preheat oven to 350 degrees

  2. Combine flours, wheat bran, brown sugar, baking powder, baking soda, and nuts; mix well

  3. Combine cranberries and sugar.

  4. Stir sugared cranberries, egg, milk, orange juice and oil into flour mixture all at once, but mix just until combined.

  5. Pour into greased 9x5x3" load pan

  6. Bake for 60-70 minutes, or until the bread is firm in the center.

  7. Cool in pan 10 minutes, removed to rack and cool before slicing.

  8. Yields 1 loaf.
