A different twist for a waldorf salad using healthy wheat berries. It's a little high in calories, but can be a meal.

Recipe Ingredients for Wheat Berry Waldorf Salad

2 cups uncooked wheat berries
7 cups water
1 c chopped walnuts
2 medium apples
1 c raisins
1 c chopped parsley
1/4 c vinegar
1/2 c apple juice
1 tbsp salt
1/2 tsp pepper
1/2 tsp nutmeg
1/2 tsp cinnamon
1/2 c extra-virgin olive oil
1/8 c lemon juice

Recipe Directions for Wheat Berry Waldorf Salad

  1. Soak wheat berries overnight. Drain.

  2. Cook wheat berries in water about 50 minutes. Drain and cool.

  3. Add rest of ingredients. Mix well.

  4. Note: I add a little salt to the cooking water and you can cut down on the salt in the recipe.
