Wheat Berry Salad with Balsamic Dressing

Recipe Ingredients for Wheat Berry Salad

1 cup dry wheat berries
1 red pepper
1 small red onion
2 carrots
2 tbs dijon mustard
2 tbs balsamic vinegar

Recipe Directions for Wheat Berry Salad

  1. Cook wheat berries until soft in 3 cups water

  2. Chop remaining ingredients

  3. Saute only the onions until soft

  4. Combine everything and stir

  5. Salt and Pepper to taste
