Recipe Ingredients for Wheat Berry Salad

1/4 cup wheat berries, cooked
1 tsp olive oil
1 tbsp lemon juice
2 roma tomatoes, chopped
1/2 medium cucumber, chopped
1/2 cup parsley, chopped
1/4 cup mint, chopped

Recipe Directions for Wheat Berry Salad

Mix the cooked wheat berries with the oil, lemon juice and tomatoes. Allow the grains to marinate for 15-20 minutes. Add remaining ingredients and toss. Add salt and freshly ground pepper to taste.
