Wheat Berry salad with a hint of orange

Recipe Ingredients for Wheat Berry Salad

4 cup wheat berries, cooked - 1 cup raw
3/4 cup carrot, shredded
1/2 cup zucchini, shredded
2 green onions, chopped
2/3 cup dried cranberries
1 tbsp orange zest
1/2 cup orange juice, fresh squeezed
1 tbsp apple cider vinegar
1 tsp olive oil

Recipe Directions for Wheat Berry Salad

  1. Soak wheat berries overnight.

  2. Simmer wheat berries in soaking water until quadrupled in quantity.

  3. Combine cooked and cooled wheat berries, carrots, zucchini, green onions, cranberries and orange zest.

  4. Combine orage juice, apple cider vinegar and olive oil in small bowl.

  5. Dress salad and mix well,

  6. Refrigerate for 4 hours or overnight.
