Wheat Berry Salad with Dried cherries

Recipe Ingredients for Wheat Berry Salad with Dried Cherries and Almonds

1.5 cup Hard Red Wheat Berries Organic
4 oz Almonds Slivered
1 medium (4-1/8" long) Onions, Spring Or Scallions
2 stalk, large (11"-12" long) Celery
0.5 cup Dried Cherries
0.5 cup Parsley
2 tbsp Extra Virgin Olive Oil
3 Teaspoon Juice
2 dash Pepper, Black
1 dash Salt, Table

Recipe Directions for Wheat Berry Salad with Dried Cherries and Almonds

  1. In a large pot combine the wheat berries and enough water to come 2 inches over the wheat berries. Bring to a boil and cook uncovered for 1 hour, or until tender. Drain and let cool. Toast the walnuts in a medium dry skillet over medium-high heat until fragrant, 2 to 3 minutes.

  2. In a large bowl, combine the wheat berries, walnuts, celery, dried cherries, scallions, parsley, olive oil and lemon juice. Season, to taste, with salt and pepper.
