This salad uses red winter wheat berries and makes a delicious side dish. Pomegranate can typically be found fresh in the grocery stores in the fall.

Recipe Ingredients for Wheat Berry & Pomegranate Salad

2 cups Wheat, Hard Red Winter
6 cups of water
1 pomegranate
1 fennel bulb, diced finely (white part only)
1 cup parsley, diced
5 green onions
1/2 cup lemon juice
1/2 cup olive oil
1 tbs honey
1 1/2 t curry powder
1/2 t cumin
1/2 t cinnamon

Recipe Directions for Wheat Berry & Pomegranate Salad

  1. Bring wheat berries and water to a boil in a pot, reduce to simmer. Let simmer for about an hour or until tender. Prepare other ingredients and place in large bowl. When ready, remove wheat berries from heat and drain in mesh strainer. Rinse with cold water to stop cooking and cool the wheat berries.

  2. Add cooled wheat berries to the prepared pomegranite seeds, diced fennel, diced parsely, and diced green onion.

  3. Make the vinegrette by adding lemon juice, olive oil, honey, spices, salt and pepper in bowl. Wisk until combined. Pour over salad. Let flavors combine 8 hours or overnight. After flavors combine, add any additional spices/flavors to taste. Makes about 2-2.5 quarts of salad.
