Recipe Ingredients for Wheat Berry and Chick Pea Salad

2 cup Wheat, Hard White Berries, Organic
2 cup Chickpeas (Garbanzo Beans, Bengal Gram), Mature Seeds
1 cup, chopped Onions, Spring Or Scallions
1 cup, diced Celery
1 cup, chopped or sliced Tomatoes, Red, Ripe
4 oz Extra Virgin Olive Oil
2 tbsp Lemon Juice, Canned Or Bottled
2 tbsp Unico White Wine Vinegar
2 tbsp Parsley
3 tsp Honey
2 tbsp chopped Shallots
1/4 tsp Sea Salt
1/4 tsp Pepper, Black

Recipe Directions for Wheat Berry and Chick Pea Salad

Mix the vinaigrette by combining all the ingredients with a whisk or in a blender. Add the salad ingredients and mix well. Let chill overnight or for several hours to let the flavors blend. Serve chilled on a bed of leaf lettuce.
