small amount fills you up... deeelicious with a 1/2 cheese quesadilla (add 2 1/2 cups cooked wheat berries and it's great!)

Recipe Ingredients for wheat berry, bean and corn salad

1 avocado, diced
1/2 small onion, diced
2 stalks celery
1/2 bell pepper, diced
15 oz. corn
15 oz. black beans
2 tbsp olive oil
2 tbsp lemon juice
2 tsp salt
2 tsp pepper

Recipe Directions for wheat berry, bean and corn salad

  1. toss everything in a bowl and mix together with your favorite seasonings (I just use garlic and cumin)

  2. if you really want a great meal, cook 1 cup of soft wheat berries (they'll make 2 1/2 cups cooked), let them cool and mix them with the other mixture
