A vegetarian alternative to meatballs from Vegetarian Times.

Recipe Ingredients for Wheat Balls

1 cup bulgur
3 cups cold water
2 tablespoons water
1 small onion, finely chopped
1 teaspoon salt
1/4 cup skim milk
1 teaspoon Italian Seasoning
1 medium potato, boiled and mashed
3 tablespoons bread crumbs
1 large egg
1/4 teaspoon pepper
1/8 teaspoon nutmeg
1 tablespoon parsley
1 tablespoon butter
1 tablespoon canola oil

Recipe Directions for Wheat Balls

  1. Combine bulgur and water and allow to soak for 30 min.

  2. Drain thoroughly.

  3. Saute onions and 2 tbsp water in large skillet until water evaporates.

  4. Remove from heat, add salt, milk, and Italian Seasoning.

  5. Add onion mixture, potato, bread crumbs, egg, pepper, nutmeg and parsley, and blend thoroughly.

  6. Shape into 2 in. balls and refrigerate at least 1 hour before continuing.

  7. Preheat oven to 300 F.

  8. Heat butter and oil together in a large skillet. Saute wheat balls in skillet over medium heat until all sides are lightly browned.

  9. Transfer wheat balls to baking dish and bake 15 minutes.
