Recipe Ingredients for WH Vegetable Beef Soup

1 1/2 lb stew beef
1/2 large red onion
14 1/2 oz diced tomatoes
1 stalk celery
1 clove garlic
1 tbsp dried parsley
2 tbsp fresh basil
2 cups water
16 oz frozen mixed vegetables
28 oz crushed tomatoes

Recipe Directions for WH Vegetable Beef Soup

  1. Brown beef in heavy dutch oven.

  2. Add onion and garlic until cooked, then add celery. Cook until tender.

  3. Add parsley, basil and water and diced tomatoes, bring to boil, then reduce heat to simmer, cover.

  4. Cook covered for 1-2 hours.

  5. Add beef broth or bouillon, if desired, rather than water.

  6. Serve over elbow macaroni, cubed boiled potatoes or add barley to the last few minutes of cooking.

  7. Freezes well, but don't add pasta, barley or potatoes until you thaw, reheat and serve it.
