I didn't have low fat products. Substitute with low fat products and it is a wholesome delicious meal!

Recipe Ingredients for Western Veggie Mix

15 oz Black Beans
1 medium Bell Pepper Red
3 medium Bell Pepper Green
1 large Onions
6 oz Beef Smoked Sausage
0.67 cup Natural Chunk Cheese - 2% Reduced Fat - Sharp Cheddar
16 oz Diced Tomatoes

Recipe Directions for Western Veggie Mix

  1. Saute sausage and onion in some Tony's seasoning until browned. (No need for oil if using non-stick pan)

  2. Add diced bell peppers and cook covered for about 5minutes.

  3. Drain and rinse beans and add to pan along with the tomatoes (if using canned, drain a little). Toss.

  4. Let simmer uncovered for another 5 minutes.

  5. Put into a casserole dish and sprinkle with cheese.

  6. Broil or bake until cheese is slightly browned.

  7. Take out of oven and let sit for 5-10 minutes.
