Ground Beef casserole. Can be assembled ahead and refrigerated. Good cold weather one pot meal.

Recipe Ingredients for Western Meal-in-One

1 lb ground beef, lean
1 tbsp salad oil
1 clove garlic, minced
1 tsp salt
1 large onion, chopped
1 green pepper, chopped
1 tsp chili powder
15 oz tomatoes
15 oz kidney beans
3/4 c rice, uncooked
1/4 c chopped ripe olives
3/4 c shredded cheddar cheese

Recipe Directions for Western Meal-in-One

In frying pan over medium heat, brown ground beef in oil until crumbly. Add garlic, salt, onion, and green pepper. Saute 5 minutes or until vegetables are limp. Mix in chli powder, tomatoes (broken up) and their liquid, kidney beans and their liquid, and rice and turn into a greased 2-quart casserole. Bake covered in a 350 oven for 45 minutes (or until rice is cooked). Sprinkle with olives and cheese and continue baking uncovered for 15 minutes longer until cheese is melted.
